I have a dual-boot setup, with Ubuntu12.04 and Windows7.
I have a MSAccess2000 dbase on the Windows7 partition.
I want to view and sort the tables in Ubuntu, not edit them. What is the easiest way to do this? I can view the tables using MDB File Viewer, but cannot sort them.

AFAIK there is no Linux program that will do what you want. The nearest possibility is Kexi which will import the Access flles into its own format files and then sort them - but you cannot export them as Access files - but I haven't checked the latest release.
A long term option is to install mysql on Windows because you can use Access as a frontend for mysql (as well as SQL sever). The main problem is that Access only respects blanket security - so you cannot use any of the fine-grained security that a Linux user takes for granted.
